Radicchio and Arugula Salad with Parmesan and Balsamic Vinaigrette

Radicchio and Arugula Salad - fresh and crunchy. The perfect start of a Mediterranean diet meal!

Ingredients

  • 1 handful chopped radicchio
  • 1 handful arugula
  • 1/2 tsp of balsamic vinegar
  • 1 Tbsp of extra virgin olive oil
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • grated Parmesan cheese, as garnish

Instructions

  1. In a salad bowl, toss together the chopped radicchio and arugula.
  2. In a small bowl, whisk together the vinaigrette ingredients - balsamic vinegar, olive oil, salt and pepper.
  3. To serve, drizzled dressing over the salad and toss to combine. Top with freshly grated Parmesan. Enjoy!

This salad is totally amazing!! Such a nice change from a normal boring salad. I added a little dijon mustard and shallot to the dressing. The radicchio and arugula combo completely nailed it. Thank you for sharing and keeping my lunches exciting!
