Description

Potato Thyme Chickpeas Soup with carrots, onions, garlic, and vegetable broth for tasty flavor. Extremely easy to make!

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 2 Tbsp olive oil
  • 2 potatoes, peeled and cubed
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 2 cups water
  • 2 Tbsp yogurt
  • 1 tsp salt
  • fresh thyme

Instructions

  1. In a soup pot over medium-high heat, add the oil, carrots, potatoes and onion. Season with salt. Once the vegetables start to cook down, add the garlic and cook until it gets fragrant.
  2. Add the chickpeas to the pot. Fill with vegetable broth and water. Cover the pot and bring to a simmer. Cook until the vegetables are tender, about 15 minutes.
  3. Once the soup is fully cooked, add the yogurt and give it a stir. Serve the soup topped with fresh thyme.
