Roasted Fajita-Spiced Chickpeas Pitas with Avocado Dip

Roasted Fajita-Spiced Chickpeas Pitas with Avocado Dip - super easy, flavorful, and ready in 35 minutes!


  • 4 small pitas
  • 1 cup chickpeas, cooked and drained
  • 1 tsp fajita seasoning
  • 1 avocado
  • 1 clove of garlic
  • 2 Tbsp olive oil
  • 2 Tbsp lime juice
  • 1 handful of fresh cilantro
  • 1/2 tsp cumin
  • 1/2 jalapeno pepper
  • 1 tsp chili powder
  • 2 Tbsp Greek yogurt
  • salt and pepper, to taste


  1. Preheat the oven to 425F/220C/Gas Mark 7. Place the drained chickpeas on a large baking sheet. Sprinkle with chili, fajita seasoning, salt and pepper, to taste. Drizzle with olive oil and stir to mix. Roast for 20 minutes, stirring every 7-8 minutes, until the chickpeas turn golden brown.
  2. Place avocado, garlic, olive oil, lime juice, cumin, jalapeno, fresh cilantro, salt and pepper in a food processor. Pulse until smooth, scrape down the sides of the bowl if needed.
  3. Start assembling the pitas by spreading each pita with a spoonful of avocado dip, topping with roasted chickpeas and sprinkling more fresh cilantro. Finish with Greek yogurt topping.

To make this recipe vegan, omit the yogurt topping.
